A bistro built around the grill, not the other way around.

Most restaurants in Medellín choose their cuisine and then choose their kitchen. At Babette, we started with fire — an open-wood grill at the centre of everything — and built every dish outward from its heat.

That means the fish takes smoke the same way the beef does. The seasonal vegetables come off the coals with a char that no oven can replicate. The sharing plates are built for the whole table, not just the carnivores. Fire changes everything it touches, and we believe every ingredient deserves that transformation.

Babette is named for a certain film, a certain dinner, a certain belief: that a truly great meal is an act of generosity — made to be shared, to slow the evening down, to become the thing people talk about on the drive home.

Our Principles

Three things we believe about dinner.

Fire is honest.

You cannot fake what a wood fire does to a piece of food. The crust, the smoke ring, the caramelized edges — they are either there or they are not. We like that honesty. It keeps us disciplined.

The table is for everyone.

A beef parrilla is a fine thing. But a table where the vegetarian, the pescatarian, and the carnivore all eat brilliantly — that is a rarer thing. Babette is built for the full table.

Dinner deserves time.

We do not rush. We set the table properly, we bring dishes when they are ready, we refill the wine. A great meal is measured in hours, not covers-per-night. Come hungry. Stay.
